You can choose what the miner should collect. Just click on the ore icon you don't want to disable it. So in case of 50-50% iron-carbon, click carbon to collect iron only.

Having a lot of stuff small area certainly does not help on fps count. In my test world I get a ~10 fps drop if I look at the things I have there, compared to looking into the opposite direction...
